Hot and Cold Power Bowls


Whether you’re looking for a quick lunch, or want a satisfying one-bowl meal, power bowls will nourish you while satisfying your taste buds. These flavorful combinations have everything you need, hot or cold—in just one bowl. Complex carbohydrates, nutrient dense vegetables, high quality protein and heart-healthy dressings will put your hunger to rest.

(Serves 2)

Ingredients for Greek Power Bowl:

  • 1 cup cooked barley, whole grain couscous, or quinoa
  • 2 cups raw spinach
  • 1 cup organic tempeh, cubed
  • 1/2 cup parsley, finely chopped
  • 1/4 cup olives (kalamata or other variety of your choice)
  • 2 Tbsp sliced almonds

Ingredients for Dressing:

  • Juice of one lemon (about 1/4 cup)
  • 1/8 cup Vega Antioxidant Omega Oil Blend, or extra virgin olive oil
  • 2 cloves of garlic, minced
  • 2 Tbsp oregano, fresh or dried

Preparation:

  1. Combine all ingredients and lightly toss in a sauté pan or wok to warm through.
  2. Make the dressing by combining all dressing ingredients in a small bowl, or shaking them in a small glass jar with a lid.
  3. Remove wok or sauté pan from heat. Pour dressing over power bowl ingredients, and toss until well incorporated. Serve warm.

Ingredients for Seaweed Power Bowl

  • 1 package of kelp noodles, or 1 cup cooked wild rice, cooled
  • 2 Tbsp dulse
  • 1/2 papaya, cubed
  • 1/2 avocado, cubed
  • 3 large kale leaves, chopped
  • 1 green onion, sliced
  • 8 oz extra-firm organic tofu, cubed
  • 2 Tbsp sesame seeds (optional)

Ingredients for Dressing:

  • Juice of one lemon (about 1/4 cup)
  • 1/8 cup Vega Antioxidant Omega Oil or sesame oil
  • 1 Tbsp fresh ginger, grated
  • 1 tsp wasabi or dried Thai chilies (optional)

Preparation:

  1. Rinse kelp noodles in cool water for 2 minutes and drain well. Set aside in a large salad or serving bowl.
  2. Combine all power bowl ingredients in the bowl with the kelp noodles.
  3. Make the dressing by combining all dressing ingredients in a small bowl, or shaking them in a small glass jar with a lid.
  4. Pour dressing over power bowl ingredients, and toss until well-coated right before serving.
